The first day of classes!

School started on today and it was everything I hoped for and maybe more. After all the basic boring first day of school junk for the first few hours. Then we got right into the fun stuff. Got our chef kits which was like Christmas. The first thing we made was Pate Sucree, a delicious sweet tart dough. I was surprised in some of the technique. Apparently I’ve been doing it wrong for years. Who knew if you whisk the eggs you add into the creamed butter sugar mixture you end up with better dough. I guess that’s why I’m paying $40,000. We also made apple compote. After class I had to run, literally, to get to work. It was a long day, 7am-10pm. Not totally sure how much longer Ill be able to keep that up.
